Meal prepping and…

Whew! I am tired….
I got 9 hours of sleep last night, and great scores on my OURA app! I will be bottling the “Wonder Woman” energy for a later date! Say, for Wednesday 🙃 With the mental clarity and pep of a good night’s sleep I decided to meal prep Breakfast choices for the week ahead. Breaking the fast has always been challenging for me, in that I am simply not hungry in the morning. My favorite routine each day is a strong cup of coffee and an sliced apple with cinnamon. Its gets me going and fuels me up for the next few hours. I do mix an unflavored Collagen Protein into my cup of joe as well to a small protein boost. Full disclosure, lately I am making myself eat a small high protein meal even if I am not hungry. It is a challenge getting enough quality protein and carbs in each meal to sustain my energy and skeletal muscle, however I try my best. At 61, I am leanest and most muscular I have ever been. And, I want to maintain it all!

Since I have been extremely unexcited about my breakfast options lately, I decided to revisit an older recipe for OverNight Protein Oats and a new one for GF Oatmeal Banana Muffins. For some reason, I was missing Oatmeal…so, i just followed my gut!

The best part is had all the ingredients in my Kitchen - oats, GF flour, cinnamon, baking powder, baking soda, bananas (I freeze them as when they ripen), The aromas of the muffins baking this afternoon was delightful and comforting in our home.
